Dijon And Vermouth Breaded Chicken with Spinach Zucchini and Grape Tomato Salad

This week’s easy recipe, Dijon And Vermouth Breaded Chicken with Spinach Zucchini and Grape Tomato Salad,  is perfect for a dinner for two by the fireplace. But, if there is an army of kids, or special friends for whom you want to cook a great easy dinner then just double or triple the recipe.  I am telling you for sure if you make this it will be a hit!

Ingredients

1 whole (2 halves) skinless chicken breast fillets

1 1/2 C dried bread crumbs

1/4 C  olive oil

1/4 C vermouth

2 Tbsp Dijon 

1 zucchini sliced into coin sized rounds

1 yellow squash sliced into coin sized rounds

12 sweet grape tomatoes halved

Fresh Spinach

1/4 C canola oil

1/4 C red wine vinegar

1/8 C balsamic vinegar

1 Tbsp soy sauce

1Tbsp fresh cilantro chopped

1 Tbsp fresh lime juice

1/4 tsp horseradish

 salt and pepper to taste  

1 Tbsp of olive oil

 Preparation

Wash the spinach and remove long stems.  Cut the other vegetables, and store in a bowl in the refrigerator.  In mixing bowl mix canola oil, red vinegar, soy sauce, horseradish, lime juice, basalmic  vinegar, cilantro, and salt and pepper to taste. Cover and place in refrigerator. 

Wrap chicken breasts in plastic wrap leaving extra room around edges. Flatten breasts with meat tenderizer, and remove plastic wrap.

In a bowl add vermouth, olive oil (not the Tbsp), Dijon and stir. In another bowl add bread crumbs.  On large plate paint the chicken breasts on one side, and then cover with bread crumbs.  Flip breast and repeat.

Heat oven to 450 degrees.

Heat 1 tbsp of of olive oil in fry pan that is oven safe.  Add chicken ugly side up and brown for 3 minutes on medium high. Gently flip chicken breast and place fry pan uncovered in oven  for 8 minutes.

Mix salad vegetables, add dressing, and plate. When chicken is done let stand for a couple minutes.  Plate chicken and you are ready for a super easy great meal!

 No potatoes, no rice, no french bread, just chicken and salad. 

AND STUFF      

I live in a comfort zone.  A nice little beach community with great neighbors right out of another era.  We have group dinners, street parties, and an occasional night on the town. And, this is perfect for me.  She Who Must Be Obeyed thinks I am sorta a shut in,  but that couldn’t be farther off the mark. I just like my comfort zone which consists of about a square mile by the beach.

Last year I was talking about going to the International Food Bloggers Conference in Santa Monica.  Sue just laughed and said I would never do it.  Well, no doubt as she intended, that sealed the deal for me.  I attended the IFBC, I was surrounded by people I had never met before for a 2 and 1/2 day conference ….. and I had a blast. I have signed up for the 2012 IFBC in Portland and can’t wait.

Last fall I attended the Slope Surfers ski club membership drive (all by myself), and even joined the club! But, since then I settled back into my comfort zone in the hood.  Snow has been light in most ski areas including Mammoth, so I had placed the whole ski club idea on the back burner. Last weekend I was toying with the idea of going up with the Slope Surfers, but wasn’t sure.  That’s when She Who Must Be Obey laughed and said I’ld never do it.  It appears that Sue can quite effectively work me , because within a day I had signed up for a trip with the club.

I will be riding in a bus for 6 hours with people I do not know.  Followed by sleeping in a condo with people I do not know.  Followed by skiing, eating and drinking with them for two days and nights.  And then, if this goes anything like the IFBC, I will board the bus for the 6 hour trip home with 30 great new friends.    

Think I’m really glad Sue can play me like a violin. With the aid of her jedi mind control my comfort zone is broadening.  I’ll report back, wish me luck!

EASY CHILI WITH MEAT AND BEANS

EASY RECIPE

Whether you are a busy mom or dad  who needs a quick home cooked meal recipe or you are getting ready for the big game, my Easy Chili with Meat and Beans recipe is for you! You don’t need to buy an expensive one time chili seasoning package at the store.  With this easy recipe and just a few basic spices you are on your way to a great meal.

Recipe serve 4 to 6

Ingredients:   

1 lb. ground beef

1 14.5 oz can  diced tomatoes

1 15 oz can tomato sauce

1 15 oz can white kidney or pinto beans

1 15 oz can red kidney beans

1/2 white onion – diced                                                           

1/2 green or red bell pepper – diced

1 tsp garlic crushed

1 tsp jalapeno – diced (seeds removed)

2 Tbsp chili powder

1/2 tsp ground cumin

1 12 0z Sierra Nevada beer (or your choice)

1/3 C fresh cilantro – chopped

salt and pepper to taste

Grated cheese for topping

Preparation

In a large pot brown the ground beef( salt & pepper the hamburger to taste).  When meat is browned, spoon out most of the grease.  To the the ground beef add the onion, bell pepper, and saute’ at low temperature for a few minutes.  Add the jalapeno and garlic and saute’ a few more minutes.  Add the tomato sauce, diced tomatoes, chili powder, cumin, and cilantro. Stir, turn to medium high and bring to low boil, then reduce temperature to maintain simmer.   Slowly add the beer taking care to avoid foam overflow. Bring back to strong simmer. 

Approximately 20 minutes prior to serving, drain can fluids from the beans, rinse beans with fresh water, drain and add beans to chili. Stir and get chili back to a strong simmer and then cover. Simmer for 20 minutes or more.

Before serving the chili, top each bowl with a little grated cheese. There you go, in no time at all you  just made an awesome home made, low sodium, killer chili that everybody is going to love!   

 AND STUFF 

 Perception is reality. 

 In the late 90’s I was a partner in a middle size law firm. Back in those days, I had two or three associates working files under my supervision. I remember one file was close to settling as I was preparing to go to trial on another matter.  The associate had done a fine job negotiating the settlement, and all that was left was to document the agreement. 

I went to trial for a couple weeks. Upon my return to the office the associate was very keen to meet with me.  Seems the associate had a little problem with the settlement; it had never been documented and now one party was balking. Unfortunately the associate had relied on the other attorney’s word.  I hate to sound old and grumpy, but relying on anyone’s word, let alone that of an attorney, is never a good strategy. 

 The associate was a tad uncomfortable as we spoke, because it turned out the trial was scheduled to commence the next day. Fortunately I was relatively young and free of heart issues, because my blood pressure must have spiked something fierce. We were no where ready for trial.  But, this was not as bad as it would seem because courts, like air carriers, over book. The result is that trials do not typically go out on the day scheduled. In fact they may get kicked for days, weeks, or even months. And, even if the matter does go out, the first few days are spent on motions, instructions, and jury selection. So, typically lawyers do not haul their trial boxes and exhibits into the court room on the first day of trial. 

 I had two goals that day, not let on that we were unprepared to go to trial, and kick start the stalled settlement. Having only until the next morning to prepare I left the associate to spear head trial preparation, and I asked my secretary to change the labels on my prior trial’s boxes and exhibits to the current case name to create a ready for war appearance.  The next morning, having made certain that the exhibit boards were facing in to each other and securely sealed, I walked into court with boxes and exhibits ready for trial.   None of the other counsel were ready to go to trial, as they too had relied on the oral settlement.  Rest assured everyone was very interested in seeing my exhibit boards.  I calmly advised them that they would see the exhibits in due time. 

 Prior to our case being called I could see the other lawyers talking amongst themselves, and going off to speak with their clients. Eventually they walked over to me and began talking about how crazy it was that the settlement had broken down. The consensus  was that it would be a shame to go to the expense of a long trial when we had been so close to a deal.  So, nice guy that I am, I agreed to their suggestion to revive the old deal and recite it on the record as soon as the judge took the bench. 

Moral of the story, people tend to do the right thing when they perceive they are screwed; they just need a little help coming to that perception.

Easy Low Fat Coleslaw

EASY RECIPES

My easy slow cooker pull pork sandwich post included a reference to Sue’s easy low fat coleslaw. Monica requested the recipe.  I should tell you that Sue’s mom found the recipe in the Los Angeles Times, Culinary SOS column years and years ago.  The recipe was requested by a reader and SOS was able to get the Tam O’Shanter recipe.  Although Sue has modified the recipe to reduce salt and fat even further, all accolades go to Tam O’Shanter or SOS.

And, you know what’s really cool about the recipe?  Sue’s mom and dad used to go to the Tam O’Shanter on dates 65 years ago! Well, what’s good stays good!    You are going to love this recipe.   

Recipe serves 6.

INGREDIENTS:    

4 C shredded cabbage (from cabbage head or pre-shredded in bag)

1 C chopped celery

1/2 C green onion diced

1/4 C  low salt roasted peanuts – chopped

1/2 tsp seasoned salt

1/4 tsp seasoned pepper

1/3 C fat free Italian Drssing                             

Preparation

To large bowl add  cabbage, green onion, celery, and peanuts. Add seasonings and lightly toss.  Add fat free Italian dressing and toss again.  Cover with wrap and chill for later serving.


And just like that you made an easy coleslaw that is great and does not have mayo!  Super tasty and low fat!

EASY SLOW COOKER PULL PORK SANDWICHES

We’ve had a slow cooker in the cupboard forever.  Once or twice we even took it out to make hot cider for a party.  But, I had never used it to cook.  So, I was surfing the Internet and hit upon Cuban Style Pull Pork sandwiches.  Seemed like a whole lot a baking would be necessary.  And then the light bulb went off just above my head.  I could cook the pork in my slow cooker while I did other things; like watch the 49ers game.  I researched numerous recipes, added a few of my own ideas, and boom, it was time to get cooking on my new easy recipe.

EASY RECIPE 

Serves 8

Ingredients:     

2 1/2 lb. boneless pork loin roast

1 large Onion sliced

3/4 C Margarita (room temp)

1/2 C water (warm)

1/2 tsp cumin

1 tsp dried oregano

1 Tbsp BBQ Sauce

1 tsp Liquid Smoke

salt & pepper to taste

coleslaw

Ciabatta rolls

Preparation:   

Use your favorite  coleslaw recipe or buy ready made.

Slice the onion into rounds and place on bottom of slow cooker.   

 

In a bowl add the Margarita, water, cumin, oregano, BBQ sauce, Liquid Smoke, salt and pepper. Stir to mix.  There should be a great deal of  Margarita left in the bottle, reserve and refrigerate for consumption at dinner.      

Place Pork Loin Roast on top of the onions, and then pour mixture over the pork.

 

 

 

 

Place the cover on the slow cooker, and start cooking the pork.  If cooking on low heat it will take between 6 and 8 hour.  If you are cooking on high it will take between 3 and 4 hours.  As I understand it, as long as there is liquid in the slow cooker you just about can’t overcook the meal. 

 Now comes the hard part, what to do for anywhere from 3 to 8 hours.  I watched She Who Must Be Obeyed make her great low fat Cole Slaw and then watched a playoff game.  

Eventually, the pork will be cooked and super tender.  Remove from slow cooker and cut and pull it apart. When pork is pulled, add some of the cooking sauce for more flavor.  Place a serving on rolls, add coleslaw, and pour a nice cold Golden Margarita.  That’s it, you  just made a great easy dinner and never broke a sweat!

     

AND STUFF 

She Who Must Be Obeyed hates it when I leave my cell phone at home when we shop.  From her scary perspective, I am like a small boy who always wonders off, and without my phone she has to hunt me down in the store. Of course I haven’t wondered off, I’m just looking at items that interest me.  As with anything, I guess it’s a perspective thing. 

Geezer Alert!  Read further at your own risk. 

I don’t like cell phones. 

I have one, and to be honest, I could not function in today’s business world without my cell phone.  Still, I don’t like cell phones. Or perhaps more accurately, I do not like how people are socially evolving with their cell phones. Many people are literally never alone with their thoughts.  They are always talking with someone, somewhere, connected by the cell phone. 

I have actually seen two teenagers walking together, but rather than enjoying their time together, they were each on a cell phone speaking with someone else (or, who knows maybe they were speaking to each other but using the phone to look cool – still a problem). How much social stimulus does one need? I am certain women would never do this, but I have seen men in public restrooms answering the “call” of nature while at the same time on a “call” with someone somewhere who could be doing literally anything while carrying on a conversation that for some reason can not be interrupted. 

Years ago when I would see someone walking down the street ranting and raving to no one in particular, it was a pretty good indication of the person’s state of mental well being. Now, it’s more likely the person has a cell phone ear bud and is fighting with a girl friend, dropping F – bombs as he strolls along the boardwalk at the beach. 

And that, I think, is what bothers me.  The cell phone, along with reality TV, has removed the concept of self censorship and control. Since people are plugged in all the time, what once was a private thought, is now proclaimed openly for all to enjoy. No one need ever be alone with a thought, or put another way, deprived the entertainment of spontaneous flow of consciousness chatter. 

Maybe it’s just me, but I like walking alone, really alone, not even someone in my ear, just me and my thoughts. Some of my thoughts are down right stupid, and occasionally include a well deserved F – bomb. But they are solely my thoughts.  I suppose there is a danger though; what if while in quiet reflection strolling in public I speak aloud by accident?  That could be very bad without the grace provided by the cell phone ear-bud . Why, I could sound like a person just shy of a full load of bricks walking along ranting to myself.  

Wait….. That’s it!!

I shall always wear a cell phone ear-bud as a prop while walking;  that way I can blurt out virtually anything in public and get a pass.  Genius.
