Easy Meatballs with Squash Dinner

EASY RECIPE

I wanted a good meatball dinner but not the heavy pasta or potatoes that usually accompany such a dish. First I started my quest to find a relatively light but flavorful meatball recipe. Armed with general knowledge of meatball construction I ventured off on my own. I immediately veered off the road with my choice of 90/10 ground beaf. Not enough fat many would yell. But I had a plan. To bring up the fat and flavor I decided to incorporate Farmer John Classic Sausage.  The result? An easy but awesome home made dinner!

recipe will serve 2 with left overs.

Ingredients:

1 lb. 90/10 ground beef.

4 0z Farmer John Classic breakfast sausage or similar.

2 slices day old sourdough bread (toasted and then crushed).

1 egg.

1/4 cup minced onion.

1 tsp. Worcestershire Sauce.

1/4 tsp salt.

1/4 tsp pepper.

1 zucchini – julienne cut.

1 yellow squash – julienne cut.

1 garlic – minced.

tbsp canola oil.

1/4 cup mayonnaise.

1/4 cup ketchup,

1 tsp Sriracha sauce.

Tbsp lemon.

3 Tbsp. soy sauce.

6 Tbsp. Red Wine Vinegar.

3 Tbsp. fresh lemon juice.

1 Tbsp. Sugar Free Syrup (fake maple).

1 tsp. dry mustard.

1 tsp. Italian seasoning.

Preparation:

Super light sauce for vegetables:

In dressing jar mix together: 3 Tbsp. soy sauce; 6 Tbsp. Red Wine Vinegar; 3 Tbsp. fresh lemon juice; 1 Tbsp. Sugar Free Syrup (fake maple); 1 tsp. dry mustard; 1 tsp. Italian seasoning.

Stir and shake to mix, and then refrigerate.

Meatballs:

To large bowl add ground beef, sausage, egg, breadcrumbs, minced onion, Worcestershire sauce, salt, and pepper. Mix together by hand. Form the meatballs (but don’t overwork them, as one recipe advised, you are not making snowballs).  Plate the meatballs.

Tip: Place aluminum foil over adjacent burners to make cleanup easier.

Sauce for meatballs:

In small bowl combine: 1/4 cup mayonnaise; 1/4 cup ketchup; 1 tsp Sriracha sauce, and 1 Tbsp lemon. Mix and refrigerate.

Vegetables:

Add canola oil to fry pan, bring up the heat to medium and then add zucchini, squash and garlic. Simmer until vegetables brown abit. Remove and plate.

Add a little more canola oil to same frypan, raise the temperature to a little above medium and add meatballs. Occasionally turn the meatballs so they brown on all sides (nothing wrong with a little char). Until cooked through center.

To the dinner plate smear some of the mayo sauce as a bed for the meatballs. Plate the vegetables, and drizzle a little of the super light sauce over them. And that’s it you just made an awesome home made dinner!

I loved their courage, the connection they share with each other, and how they evolved through the story. Great prose, a compelling and masterfully developed plot, and exciting action! It was an awesome and satisfying read!”
