Monica’s Easy Killer Fruit Salad

EASY RECIPE

A year ago around this time I enjoyed a fabulous fruit platter created by Monica.  She shared the technique with me and it was much easier to make than it looked.  If you need to bring to a Thanksgiving feast may I suggest Monica’s Easy Killer Fruit Salad.

Ingredients:

1 pineapple

fresh strawberries

fresh blackberries

fresh raspberries

Preparation:

Step 1: At the base of the  pineapple crown cut straight across the crown (plume of leaves) taking about a half inch of pineapple so the leaves stay together.  Reserve the crown for use as the center of fruit tray

Step 2: Cut pineapple in half lengthwise.

Step 3: Half each half lengthwise to create four equal pineapple sections.

Step 4: Slice down the center on an angle to remove the core (this results in a long triangular piece for each quarter being removed)

Step 5: Use a medium sized knife to knife to fillet cut around the shell and free the fruit in one piece.

Step 6: Put the piece back in the shell and slice lengthwise down each quarter (taking care not to slice the shell) and then slice crosswise to create bite sized pieces of fruit sitting freely on top of the shell.

Step 7: Place the crown on a large platter, and then position the pineapple quarters like spokes.

Step 8:  Fill the voids between quarters with strawberries, blackberries, and raspberries.

And that’s all there is to stealing the show with your easy but beautiful fruit dish platter.

Easy Risotto with Mushrooms and Sausage

EASY RECIPE

I was reading a cooking mag while on a treadmill at the gym and saw a great risotto and sausage recipe.   I made a mental image of the dish, and once home I hit the cookbooks to get some how to tips.  Turns out it isn’t too hard to make risotto and my use of mushrooms and sausage makes for a tasty filling meal.

Ingredients:

1 and 1/4 lb. sweet Italian sausage

4 cups chicken broth

1 and 1/2 cups risotto

1 small onion – diced

1 cup fresh mushrooms – chopped

1/2 cup dried porcini mushrooms – reconstitute in bowl of warm water for 30 minutes and then drain water and chop mushrooms.

juice of 1/2 lemon

2 Tbsp olive oil

2 Tbsp finely chopped parsley

1/2 cup white wine

salt and pepper to taste

Parmesan cheese

Preparation:

Squeeze lemon juice over fresh mushrooms.

To a large pot add olive oil and bring to medium heat, add onion, mushrooms, parsley and saute for a couple minutes.

Add risotto and wine, stir and let the risotto soak up the wine.

Add 1 cup of chicken broth at a time, stir and allowing time for the risotto to soak up the broth before adding the next cup.  This step will take up to twenty minutes.

In large fry pan cook the sausage in either link form or broken up.  When fully cooked either cut links into serving size for presentation on top of risotto, or add browned sausage to the risotto and stir.

Plate dish, add Parmesan cheese and garnish with extra parsley.

Encore  – Veterans’ Day Salute

 
I have always loved air shows. When growing up my parents would take my brother and me to air shows at the Minot Air Force Base. I remember as a child watching in awe as the USAF Thunderbirds performed precision maneuvers in their brightly colored jets. Later we waited for an F-106 Delta Dart to do a fly by at a speed above the sound barrier. The air show announcer kept announcing how close the jet was getting and then, he instructed us to look to the east, and just then the Delta Dart jet burst silently into view and streaked past overhead, followed a moment later by the blast of the sound barrier and the roar of the engines. Back “in the day” things were a little looser in the world and if you were at a military air show in the geographical center of nowhere military jets were allowed to break the sound barrier at air shows, and man was that cool. I carried on the tradition of attending air shows with my wife and children.

One of my vacation ideas is the great air show held at the famous Top Gun School in Miramar, California (sadly not held this year due to shall we say civilian issues) .

At Miramar they put on a show to be remembered. But in the morning I like to view the planes displayed on the tarmac. It is just amazing to walk around and examine up close just about every type of airplane that exists. The display includes amongst other aircraft,  WWII airplanes, Cobra or Apache Helicopter Gunships, the F-14 Tomcat, an F-18 Hornet, and even a B-52 Bomber likely flown in from my hometown. And I even got to walk up the ramp and through the cargo hold of the gigantic C5 Galaxy transport plane. One year they even had a stealth fighter on display with a rope around it so you could not get too close, and to make sure distance was maintained every so many feet an armed Marine kept watch.

Viewing the static plane display would be enough for me, but the show just keeps building. Next they start the civilian stunt pilot show which exhibits the skills of amazingly talented civilian pilots.

And finally it is time for the military show to start. The military portion of the air show starts with the Army Golden Knights parachuting in freefall and then grouping together one by one to form a stack formation, which from the ground looks like each Golden Knight is standing on the Golden Knight below him.

The last Golden Knight trails the American Flag for presentation.  Finally, they break formation and each Golden Knight performs a stand-up landing on the designated dot right in front of the crowd. What an inspiring way to present the Flag.

After the Anthem is song, the show kicks into high gear as the Marines execute a full Air-Ground Assault Demo. The Demo includes: Harrier jets, attack helicopters, heavy lift helicopters carrying Marines, canons, and assault vehicles, and it is all executed in perfect precision. They even simulate bombing runs with pyrotechnics producing blasts so large you can feel the heat.

At the completion of the Demo the young Marines parade by the viewing stand on foot, or sitting atop tanks and assault vehicles to the nonstop ovation of the crowd.

At Miramar, the last event of the day is always the Navy Blue Angels who demonstrate the absolute ultimate in precision flying skills.

All too soon, the inspiring, and at times emotional, show is over and it’s time for the crowd of thousands to leave. While walking with the mass of people along well controlled paths, on the way the way to the parking area, I passed many young men and women Marines offering assistance and directions. I saw our servicemen and women up close. I saw their young faces, their proud focused eyes, and observed how well they conducted themselves. They are maybe 19 or 20 years old. And then it hits me, the show stopper is not the wonderful airplanes and complex equipment. No, the show stopper is the marvelous young men and women of the United States Armed Forces. We are so blessed by their devotion to God and Country.

Six Layer Grilled Pulled Pork Sandwich

EASY RECIPE

Hold onto your socks because my easy recipe for Six Layer Grilled Pulled Pork Sandwich rocks!  I got the idea from Tommy Bahama’s in Palm Desert and messed around until I had a great version.  Trust me, this is the sandwich you need for the apre ski session!

recipe serves six.

Ingredients:

1 and 1/2 lb pork loin – sliced into 3 inch pieces.

1 cup mayonnaise.

1 Tbsp Sriracha chili sauce.

1/2 cup BBQ sauce.

1/2 cup cola.

1 cup water.

2 tsp paprika.

1 and 1/2 tsp chili powder.

1 tsp cumin powder.

1 clove garlic – minced.

1/4 tsp salt.

6 ham slices.

12 pickles.

12 slices Provolone cheese.

12 slices sourdough bread.

Preparation:

To a large pot (with cover) add BBQ sauce, cola, water, garlic and all spices.  Stir to mix.

Add pork loin pieces.

Heat on medium high until it comes to strong simmer.

Cover and reduce heat to low and simmer for 60 minutes.

Be sure to turn the pork often to avoid burning, and add water as needed.

When time is up remove pork, plate, and pull apart with two forks.

Butter 12 slices of bread on one side and brown buttered side on fry pan.

Mix mayonnaise and sriracha sauce in small bowl.

Place one browned slice of bread on a paper plate, smear mayo and sriracha mixture on the bread, add pulled pork,  add two slices of cheese, add two pickles, add slice of ham.

Place open face sandwich in microwave oven for up to 30 seconds to melt cheese.

Add top slice of bread, and serve with a community bowl of left over mayo/sriracha spread.

And that’s it, in less than an hour and a half you are feeding the gang a killer easy SixLayer Grilled  Pulled Pork Sandwich.

Three Awesome Sandwich Recipes

AWESOME RECIPE NUMBER ONE:          Easy Monte Cristo Sandwich

Recipe serves 4.

Ingredients:

For Batter:

3 eggs

1/2 C milk

1/2 tsp cinnamon

1/2 tsp vanilla extract

pinch of salt

8 slices country bread

For spread:

Store bought rhubarb strawberry fruit spread

3 Tbsp Mayonnaise

2 Tbsp mustard

2 leaves fresh mint – diced.

For the filling:

8 slices deli style turkey

8 slices deli style ham

Gruyere cheese – sliced

powdered sugar

Preparation:

Mix the mayonnaise, mustard, mint in small bowl.

In a large deep dish place 3 eggs, mild, vanilla, cinnamon, salt, and whip together.

One by one dip bread slices into the batter, covering both sides of the bread.

Melt butter in fry pan and brown the “French Toast” on both sides.  You will need to add butter as you progress through the 8 slices.  Set the browned slices to the side.

On paper plate place one slice of browned bread, spread mayo/mustard sauce on top, add 2 slices of turkey, 2 slices of ham,  and slices of Gruyere cheese.  Spread rhubarb strawberry fruit spread on second slice of browned bread and place on top to finish the sandwich.  Place in microwave on high for 40 seconds to melt cheese and warm the meat. Repeat for remaining sandwiches.

Gently move sandwich from paper plate to the serving plate, sprinkle with powdered sugar, add side of fruit and enjoy your super easy super good dinner.

AWESOME RECIPE NUMBER TWO:      Italian Sausage And Green Bell Pepper Pita   

Recipe Serves 4.

Ingredients:  

Package of pita bread    

½ red bell pepper – sliced in rounds and then in half.

½ green bell pepper – sliced in rounds and then in half.

½ medium white onion – sliced in rounds and then in half.

1 C mozzarella cheese – shredded

1 lb. chicken hot Italian Sausage (if frying remove casing)

14.5 oz can tomato sauce

14.5 oz can diced tomatoes

¼ red wine

6 fresh basil leaves- chopped

3 cloves garlic – diced

1 tsp dry oregano

¼ tsp cumin

Salt and pepper to taste

1 Tbsp olive oil

Preparation:

In a sauce pan combine tomato sauce, diced tomatoes, chopped basil, oregano, cumin, wine, garlic, and salt and pepper.  Bring to simmer.

In fry pan coated with olive oil sauté the red and green bell peppers, and onion.  When softened and slightly browned, remove to bowl and cover with foil.

In same fry pan brown the Italian sausage for approximately 12 minutes breaking the sausage into large pieces as it browns. Spoon out grease as necessary, and add water if the sausage is drying out.

Place four pita breads on paper plates, cut an opening in the pita bread to create a pouch, add sauce, vegetables,  more sauce, and top with a cheese.  Place in microwave to melt the cheese.

Remove pita bread from microwave oven and plate for dinner.  Add salad and a garnish of your choosing, close the bread cover and enjoy your great, fast and easy dinner.

AWESOME RECIPE NUMBER THREE:          OPEN FACE LANGOSTINO

recipe serves 4

Ingredients:

4 slices Tuscan Pane bread (or your choice)

4 tomato slices

12 oz package of Trader Joe’s frozen Langostino tails (pre-cooked)

Gouda cheese

1/2 C mayonnaise

3 Tbsp celery – minced

2 Tbsp fire roasted Red Peppers – chopped

2 Tbsp green onion greens only – minced

1 Tbsp Italian parsley – minced

1 Tbsp squeezed lemon juice

1 Tbsp Shrimp Cocktail Sauce

Olive oil

salt and pepper to taste

Preparation:

Thaw and rinse frozen langostino and then drain.  Use paper towel to gently absorb moisture.

Prepare red peppers, celery, Italian parsley, green onions.

Place sliced bread on oven sheet.  Brush bread with olive oil.

To oiled bread grate generous amount of Gouda cheese.

Turn oven to broil and place oven sheet of bread on top rack.  Watch carefully so as to avoid burning the cheese.

When cheese is melted, and slightly browned, remove tray from oven.

In a large mixing bowl add mayonnaise, shrimp cocktail sauce, lemon juice, salt and pepper and then stir to mix.

Next add to the mixing bowl the langostino and gently fold it into the mixture.

Finally, to the bowl add the red peppers, green onion, celery and again gently fold to mix.

To each piece of bread add a tomato slice.

Place an equal serving of langostino salad on each slice of bread, and garnish with the Italian parsley.

For my side dish I trimmed and steamed snow peas.  But, you could just as well plate a small salad or vegetable.

Hardest part of these easy recipes will be deciding which to make!
