EASY CHICKEN DINNER

EASY RECIPE

This week my easy recipe is a no problem chicken dinner based on a wonderful recipe from ‘Cuisine at home’.  Of course I played with their recipe a little and came up with  a very easy to make home cooked chicken dinner.

Recipe serves four

Ingredients:

4 half boneless, skinless, chicken breasts.

2 egg whites.

1/4 cup fat free milk.

1 cup plain bread crumbs (packaged).

1 Tbsp.  Italian Seasoning.

1 tsp. sea salt.

3 Tbsp. olive oil.

12 Golden Yukon potatoes – peeled.

1/4  cup fat free milk.

2 Tbsp. butter.

1 clove garlic- minced.

Broccoli crowns for 4 servings.

Preparation:

1.  Rinse and paper towel dry chicken breasts.

Loose wrap each breast in plastic wrap and then with meat hammer flatten until roughly same thickness.   And then place in refrigerator.

Begin heating large pot of water for

the potatoes.

 

 

 

Step 2.  In bowl wide enough to dip chicken breasts in, add egg white and milk and stir.

Step 3.  To a large plate add bread crumbs, Italian seasoning, sea salt, and mix together.

Step 4.  One by one dip each chicken breast in the egg white mixture and then place it on bread crumbs make sure to coat all side, and then plate.

Let the chicken breasts rest at room temperature for 20 minutes to set the crumbs.

Step 5.  Wash and peel potatoes and place in large pot filled with enough water to cover the potatoes.  Bring pre-heated water to strong boil and reduce to low boil. They will simmer until chicken is done cooking.

Preheat oven to 425 degrees.

Step 6.  Rinse broccoli and place in steamer pot with one inch of water.  Cover and leave on stove for later steaming.

Step 7.  Add olive oil to large OVEN SAFE fry pan and heat on medium high heat.  Add chicken breasts smooth side down and fry until golden colored – about 3 to 4 minutes. Carefully flip breasts with spatula and place fry pan in 450 degree oven for 8 minutes.

Step 8.   Turn broccoli burner to high to steam water and then reduce temp to get a nice steaming for 4 minutes or so. Turn off and leave cover on.

Step 9.   When potatoes are soft when poked with fork, drain water, and to pot add butter, milk, garlic, and then mash the potatoes.

WITH HAND PROTECTED BY QUALITY KITCHEN MIT remove fry pan from oven when chicken done.  HANDLE WILL BE EXTREMELY HOT USE KITCHEN MIT.  Make a small slice in breast to make sure the juices are not red.  If red bake a little longer.

And in less than 40 minutes start to finish you have made a wonderful healthy homemade dinner.

This was my summer for reconnecting with old friends.

My friend, and guest blogger Darrold, sent out the feelers for a small law school reunion in Minneapolis.  The plan was to have a nice get together the first night followed by a Twins baseball game the next day.  The turnout was great, and hanging with old classmates in a Twins sky box was a joy.  I stayed an extra day and hung with my old roommate and friend  Larry.  We had a great day catching up while touring the nearby lakes.

And, then I got a call from Kevin.  We shot the breeze for awhile, and then he told me about his plan to get some of the guys together for a salmon fishing trip at the mouth of the Columbia River in Oregon.  I was all in!

The lodging in Seaside was wonderful, the fishing guide great, and the times were awesome.  And yes I caught a 32 inch King Salmon.

Now that is fresh salmon!

It’s true what they say; even after 30 years when you reconnect with old friends the bond is as strong as it was back in the day.  If you haven’t seen a friend in a long time maybe now is the time to connect.

Easy Chorizo & Eggs Brunch

EASY RECIPE

Football is back!  So how about an easy brunch recipe for family or friends!  I started with the idea of the classic Huevos Rancheros and but kicked it up for the football crowd!

Recipe serves four

Ingredients:

10 oz chorizo (beef, pork or soy).

1 package frozen hash browns.

8 large eggs.

14.5  oz can re-fried beans.

14.5  oz can diced tomatoes.

4 flour tortillas (or not depending on your tastes).

3 Tbsp canola oil.

1/2 cup chopped onion.

1 Tbsp diced green chiles (canned).

1 tsp dried basil.

1/2 tsp salt.

1 clove garlic – minced.

Preparation:

In  large fry pan brown chorizo on medium high heat.  Spoon out grease as the chorizo browns. 

Add onion and garlic to browned chorizo and saute for few minutes.

Add diced tomatoes, chiles, basil, and salt. and then reduce heat to simmer and stir occasionally. Reduce for 5 to 15 minutes depending on progress of remaining ingredients.

In large fry pan heat canola oil on medium high heat add hash browns and cook pursuant to package instructions.  When cooked place in serving bowl and cover with foil.

Heat re-fried beans in sauce pan.

In large fry pan melt butter for eggs, add the eggs (four at a time).  Once the eggs form up a little add 1/2 cup of water and then cover with foil to steam eggs.  Do not over cook (think of it as almost a poached egg).

Plate the flour tortilla (or not), add re-fried beans, hash browns, drizzle chorizo sauce over the hash browns, and then top with two eggs.

Easy Grilled Tilapia Tacos

EASY RECIPE

How about a super easy grilled fish taco recipe.  I used Tilapia and the result was fabulous! This is a fun summer meal for family or dinner guests!

Recipe serves 4.

Ingredients

4 tilapia filet – about 1 1/4 lbs.

Flour tortillas.

1 package of coleslaw cabbage (or live it up and shred your own cabbage).

Juice of 1 lime.

1 avocado – diced.

1/2 cup red onion -diced.

1 tomato – diced

white rice – cooked per package

1/2 cup Diced pineapple (I used Trader Joe frozen).

1/2 grated Cotija cheese (or other hard white cheese).

1 can Cuban black beans.

1/3 cup mayonnaise.

1/2 tsp red wine vinegar.

1/2 tsp Sriracha hot sauce.

Canola oil (to coat fish on both sides)

Chili powder, salt, and pepper.

1 or 2 Lemons cut into wedges.

Preparation

Oil the BBQ grill.

Rinse fish in water and pat dry with paper towel.

Coat fish on both sides with canola oil, and then sprinkle with dash of chili powder, salt, and pepper.

Pre-heat grill to medium high heat.

In a large bowl combine mayo, lime juice, vinegar and Sriracha and stir to combine.

Add coleslaw to  to bowl, salt and pepper and then stir contents to combine.

Have diced tomatoes, avocado, red onion, and diced pineapple prep plated.

Begin rice.

Heat large fry pan to medium high, add canola oil and spin tortilla  in oil briefly on both sides and then plate.

With 8 minutes left on rice start the Cuban beans.

And BBQ the Tilapia on medium heat 3 to 4 minutes each side.

To plated tortilla add one fish filet, coleslaw, top with red onion, pineapple, avocado, and Cortija cheese.  Plate beans and rice.  Add lemon wedges to each plate and  just like that you are a master fish taco maker!

Easy Chicken Salad with Grapes and Avocado

This week’s recipe is so easy it should be a crime.  We are going to make this killer high-end salad in less than 30 minutes.   Ready…..here we go!

Recipe serves 4.

Ingredients:

1 and 1/4 lb boneless and skinless chicken breast.

1 apple diced.

1 cup seedless grapes – halved.

1 avocado – peeled, and cubed.

juice of one lime.

1/2 cup celery halved the long way and then sliced.

1/2 cup red onion -finely minced.

1/2 cup mayonnaise.

8 Tuscon kale leaves.

salt and pepper to taste.

Preparation:

Don’t do the apple and avocado prep until the end so as to avoid browning.

In a pot of boiling water cook chicken for 12 minutes or until no blood seeps when cut.

Cool cooked chicken and dice.

In a large pot, add red onion, celery,  Squeeze lime juice and stir.

Add mayo and stir.

Add apples, grapes and avocado and fold gently.

Plate Tuscon kale, and a scoop of chicken salad.

And that’s it!  You just cooked a great summer salad/dinner.
