BEST SHRIMP DINNER EVER

Full disclosure, I found a couple recipes on the internet many years that came very close to the taste of the Killer Shrimp dish served by the restaurant of the same name. Although I have fiddled with the recipe, I cannot claim it as my creation.

recipe serves 4.

Ingredients:

2 Tbsp fresh rosemary, chopped

2 tsps thyme

1 tsp black pepper

2 cloves garlic, peeled and chopped

1/2 tsp fennel seed

1 tsp celery seed

1 tsp crushed red pepper

2 qts. clam broth (Better Than Boullon makes a great Clam Base, if that is not available you can use their Lobster Base, and if all else fails you could use chicken stock, but I wouldn’t).

3 oz tomato paste

1 stick butter

1 lb shelled shrimp

1 loaves french bread (you will be dipping the bread in the broth and you will be loving it)

Preparation:

Make the clam broth per directions on whatever base you use, add the stick of butter, tomato paste and all other ingredients except the shrimp. Bring to high simmer and reduce to low simmer.

Call me crazy, but while waiting for the family to get home or the guests to arrive, make a salad.

When you are about to serve dinner, bring the sauce to a boil, drop the shelled shrimp into the pot, bring back to a boil, and then reduce heat and cook at high simmer for about 5 minutes.

Easy Tomatillo & Pork Green Chili

EASY RECIPE

While in Colorado Springs, Sue had a bowl of green chili at our favorite brewery, and she insisted I try to recreate the dish.  So here is my version of green chili with pork.

Ingredients:

1 and 1/2 lb tomatillos.

1 and 1/2 lb pork tenderloin.

2 – 14.5 oz cans of white beans.

32 oz can/box low sodium chicken broth.

2  jalapeños.

1 Anaheim pepper.

1 medium yellow onion – sliced into rings and then halved.

1/2 cup cilantro.

2 cloves garlic.

1 tsp each cumin, chili powder, oregano.

1 Tbsp olive oil.

2 drops liquid smoke.

1/2 cup margarita.

good quality bread for side dipping.

Preparation:

slice jalapeños in half and remove seeds.

remove husks from tomatillos, rinse tomatillos in water, and then slice in half.

rinse Anaheim pepper.

Heat BBQ to medium high, and add tomatillos and jalapeños (skin side down), and the Anaheim pepper. BBQ for about 7 minutes, turning the pepper to char both sides.

To blender add 1/2 the tomatillo, jalapeño, pepper, cilantro, cumin, chili powder, oregano, and pulse a few times to blend. And the other 1/2 and pulse a few more times.

To your Ninja slow cooker (or fry pan) add olive oil and heat to high. Add pork and brown. Next add onions to sauté.

Switch Ninja to slow cooker high (or generic slow cooker) add chicken broth, garlic, tomatillo mixture, cilantro, margarita, and liquid smoke. Cover and slow cook for 4 hours.

At four hours remove pork and with forks shred it. Return pork to slow cooker.

Rinse beans and add them to slow cooker and cover.  Cook until beans are soft (thirty to forty-five minutes).

And there you go, you just made a drop dead delicious green chili with pork.

In Veyron by Roger Scouton, Jack Fields and Amber Reyes are a high powered team hired to oversee a security job at the Marine Corps Warrior’s Hospice Car Rally, a rally of classic cars in Arizona. The most classic and most expensive of the cars in the rally is a Bugatti Veyron owned by Prince Ahmed. Jack and Amber are ex-military and clandestine operatives hired by the insurance firm in London to work with Colonel Day, whose organization is providing security for the event. Of course, the event does not proceed as planned, as priceless cars are stolen, owners are killed, and the Prince is kidnapped during the rally. Now, Jack and Amber are required to use their considerable skills and connections to solve the mystery and bring the perpetrators to justice. Veyron is a sequel to Roger Scouton’s book Goldplay in which readers were first introduced to Jack and Amber, the team of protagonists in his new novel. Not having read the first novel, I am sure there is some back story that describes how Jack and Amber ended up being a couple and a team. However, Veyron definitely stands on its own and the reader should not feel compelled to read Goldplay first. Having said that, the energy, characters, and plot line in Veyron were so interesting that I intend to go back and read Goldplay, too! The best part about Veyron is that the reader essentially gets three stories in one book. The characters are the glue that holds the book together – and the primary and secondary characters are wonderful. I highly recommend this book for anyone who likes action, adventure, and mystery.

Easy Homemade Ketchup

I decided to cut down on over processed and sugar filled foods. One culprit I thought I might be able to make from scratch was ketchup. After researching recipes on the internet that spanned slow cooking tomatoes for 12 hours and then stove top for 4 hours, to recipes that mimicked commercial ketchup, I picked and choose ingredients from various recipes and added some of my ingredients and came up with a quick easy homemade ketchup. Will the kids and fussy friends like it? Probably not, but for those looking for a great tasting tomato sauce for burgers or dipping crusty bread with low sugar and no additives then this recipe is awesome.

recipe makes about eighteen ounces.

Ingredients:

2 and 1/2 pounds tomatos – quartered to create 1 1/2 inch segments.

1/2 medium size red onion – chopped.

1 celery rib – halved down middle and then chopped.

2 clove garlic – minced.

1/4 cup brown sugar.

1/8 (or less) cup maple syrup.

1 Tbsp olive oil.

1 Tbsp red wine vinegar.

1 tsp Sriracha sauce.

1/2 tsp mustard powder.

1/4 tsp fennel.

1/4 tsp cayenne.

1/8 tsp liquid smoke.

a few cranks on the grinder for salt and pepper.

Preparation:

Quarter the tomatoes and place in large soup pot.

Add the vegetables to the pot.

Add olive oil and vinegar and heat at medium high for for a few minutes and then mash the tomatoes with a potato masher. Add the rest of the ingredients and simmer for 30 minutes, stirring and mashing occasionally.

Using a submersible handblender to puree the mixture until smooth.

DSCN2610Cook on low simmer without a pot lid until you get the thickness of ketchup you prefer which should take around 2 hours.

Turn heat off, let the ketchup cool and then using funnel fill clean bottles and refrigerate. Should be okay for a week refrigerated.  But remember there are no preservatives so it will spoil …. so use it while its good!

Meatless-ball Sweet and Sour Pasta

This week my recipe was inspired by She Who Must Be Obeyed’s desire to mix in more vegetarian style meals. So, I started with a recipe from Taste of Home Light Meals and went from there to create Meatless-ball Sweet and Sour Pasta.  This recipe is super easy and fast to make.

recipe serves four

Ingredients

1 package NO YOLKS cholesterol free egg white pasta.

1 package Trader Joes meatless meatballs – cholesterol free per packaging information.

1 cup snow peas halved diagonally.

3/4 cup chopped red onion.

jar of Maui Mountain Sweet N’ Sour BBQ sauce (or similar).

1 Tbsp. olive oil.

1 Tbsp. butter.

Preparation

In frypan heat olive oil and saute vegetables until tender.

Prepare pasta per instructions on package.

Heat Sweet N’ Sour sauce in pot.

Micro-wave meatless-balls per instructions on packaging.

Drain water from pasta, place butter in same pan, add cooked pasta and vegetables and mix.

Place cooked meatless-balls in sauce to coat.

Plate pasta, add meat-less balls, and drizzle pasta with additional sauce. Have left over sauce in bowl for additional sauce if needed at table.
