EASY RECIPE
This week my easy recipe is a no problem chicken dinner based on a wonderful recipe from ‘Cuisine at home’. Of course I played with their recipe a little and came up with a very easy to make home cooked chicken dinner.
Recipe serves four
Ingredients:
4 half boneless, skinless, chicken breasts.
2 egg whites.
1/4 cup fat free milk.
1 cup plain bread crumbs (packaged).
1 Tbsp. Italian Seasoning.
1 tsp. sea salt.
3 Tbsp. olive oil.
12 Golden Yukon potatoes – peeled.
1/4 cup fat free milk.
2 Tbsp. butter.
1 clove garlic- minced.
Broccoli crowns for 4 servings.
Preparation:
1. Rinse and paper towel dry chicken breasts.
Loose wrap each breast in plastic wrap and then with meat hammer flatten until roughly same thickness. And then place in refrigerator.
Begin heating large pot of water for
the potatoes.
Step 2. In bowl wide enough to dip chicken breasts in, add egg white and milk and stir.
Step 3. To a large plate add bread crumbs, Italian seasoning, sea salt, and mix together.
Step 4. One by one dip each chicken breast in the egg white mixture and then place it on bread crumbs make sure to coat all side, and then plate.
Let the chicken breasts rest at room temperature for 20 minutes to set the crumbs.
Step 5. Wash and peel potatoes and place in large pot filled with enough water to cover the potatoes. Bring pre-heated water to strong boil and reduce to low boil. They will simmer until chicken is done cooking.
Preheat oven to 425 degrees.
Step 6. Rinse broccoli and place in steamer pot with one inch of water. Cover and leave on stove for later steaming.
Step 7. Add olive oil to large OVEN SAFE fry pan and heat on medium high heat. Add chicken breasts smooth side down and fry until golden colored – about 3 to 4 minutes. Carefully flip breasts with spatula and place fry pan in 450 degree oven for 8 minutes.
Step 8. Turn broccoli burner to high to steam water and then reduce temp to get a nice steaming for 4 minutes or so. Turn off and leave cover on.
Step 9. When potatoes are soft when poked with fork, drain water, and to pot add butter, milk, garlic, and then mash the potatoes.
WITH HAND PROTECTED BY QUALITY KITCHEN MIT remove fry pan from oven when chicken done. HANDLE WILL BE EXTREMELY HOT USE KITCHEN MIT. Make a small slice in breast to make sure the juices are not red. If red bake a little longer.
And in less than 40 minutes start to finish you have made a wonderful healthy homemade dinner.

This was my summer for reconnecting with old friends.
My friend, and guest blogger Darrold, sent out the feelers for a small law school reunion in Minneapolis. The plan was to have a nice get together the first night followed by a Twins baseball game the next day. The turnout was great, and hanging with old classmates in a Twins sky box was a joy. I stayed an extra day and hung with my old roommate and friend Larry. We had a great day catching up while touring the nearby lakes.
And, then I got a call from Kevin. We shot the breeze for awhile, and then he told me about his plan to get some of the guys together for a salmon fishing trip at the mouth of the Columbia River in Oregon. I was all in!
The lodging in Seaside was wonderful, the fishing guide great, and the times were awesome. And yes I caught a 32 inch King Salmon.
Now that is fresh salmon!
It’s true what they say; even after 30 years when you reconnect with old friends the bond is as strong as it was back in the day. If you haven’t seen a friend in a long time maybe now is the time to connect.
