EASY RECIPES
I had an extra package of chicken breakfast links in the refrigerator screaming to be eaten. But it was time to fix dinner. So, I played the use whatever is in the refrigerator game. And She Who Must be Obeyed and G liked the results! Here’s my easy recipe for Pasta with Brussels Sprouts, Butternut Squash and Breakfast Links.
Recipe Serves 4
Ingredients:
1 lb. Butternut squash – peeled and cubed.
1 lb. Brussels sprouts – loose leaves removed, and stem trimmed.
3/4 lb. Breakfast sausage links.
1/2 lb. Red onion – thin sliced.
12 Sun dried tomatoes.
1/2 cup Cotija cheese (or Parmesan).
12 oz can Chicken broth.
1/4 cup American Honey Whiskey.
1 Tbsp Dijon mustard.
Salt and Pepper to taste.
16 dry oz Penne Rigate pasta.
Preparation:
Preheat oven to 385 degrees.
Spray Canola Oil on a 9.5 x 13 or so oven baking dish.
Add Brussels Sprouts and Butternut Squash.
Bake for 20 minutes.
Brown sausage links (don’t overcook because they will be in oven later).
Remove oven dish, turnover Brussels Sprouts and Butternut Squash, add browned sausage.
Return to oven for 20 minutes.
Mix the chicken broth, American Honey Whiskey, Dijon mustard, and salt and pepper in bowel to form the sauce.
Begin heating water for Penne Rigata.
Remove oven dish, add sauce, onions, and sun dried tomatoes and return to oven for 10 minutes.
Cook pasta per instruction on package and drain.
Plate pasta, top with Brussels Sprouts mixture, and then add cheese garnish.
You just made an easy but fantastic meal!
