I had a request for pasta, but I was tired of red sauce. So I searched a number of cream based sauce recipes and modified and blended a few to arrive at my Easy Fusilli with Prosciutto recipe.
recipe serves 4
4 oz prosciutto – sliced into approximately 1/2″ by 1/4″ sections.
16 oz package of fusilli pasta.
6 pitted kalamata olives – quartered.
3/4 cup half and half.
1/4 cup green onion – sliced down middle and then minced.
1 garlic clove – minced.
1 Tbsp. fresh oregano – minced.
2 Tbsp butter.
parmesan cheese – grated (enough to top pasta and have more on table).
To fry pan, heated to medium, add butter, and then to melted butter add green onion. Sauté onions for a couple minutes and then add the garlic and prosciutto and stir as it cooks for a couple minutes. To fry pan add kalamata olives and stir into existing ingredients. Finally, lower heat and add cream. Stir ingredients and place on very low heat.
Prepare fusilli per labeling directions, drain water, place pasta back into same pot and add the sauce. Stir to mix.
Plate pasta, top with cheese, and sprinkle with fresh oregano. Serve with a salad and you have a wonderful easy dinner done in no time.
