Easy Summer Tuna Stuffed Tomato Salad.

The autumn heat is coming back this weekend, so I came up with an easy, cool, summer salad.

There are many, many tuna stuffed tomato recipes out there. I read a number of them, picked and chose things I liked, and then added some of my own ideas to come up with this Easy Summer Tuna Stuffed Tomato Salad.

Serves 4.

Ingredients

4 large tomatoes.

2 – 7 oz cans Albacore tuna packed in water.

1 celery stock – halved lengthwise and then minced.

1/2 cup red onion – minced.

1/2 cup light mayonnaise.

1 tsp capers – drained

1/2 tsp fresh oregano – chopped.

1/4 tsp dill.

feta cheese crumbled.

salt and pepper to taste.

red lettuce.

avocado – sliced into wedges.

Preparation

Slice the top 1/2 inch or so off the tomatoes.  About 3/8 inch from the outside skin of tomato knife around the tomato to assist with removal of the pulp. Save nice pieces of pulp but discard seeds and slimy portions. You will be left with 4 nicely hollowed out tomatoes.

To a large mixing bowl add: tuna (drained of water), celery, capers, oregano, red onion, mayo, and  1/4 cup of the saved tomato pieces. Salt and Pepper to taste. And then stir to mix.

Carefully spoon the tuna salad into the hollowed out tomatoes. Top each tomato with feta cheese.

Arrange red lettuce on the serving dishes and center the tomato with a few avocado slices to the side.

And that’s it, a great summer meal with no oven heat.
