Easy Chicken Marsala with Spinach Salad

We dropped our youngest child at college last week, so as empty nesters the challenge is to create fun, two person meals. My first dish was inspired by the cookbook, Everyday Light Meals. Oh, and I am trying to cut down on fat, carbs, and cals. So, here we go, super easy pretty light Chicken Marsala with Spinach Salad.

Ingredients:

For Chicken Marsala-

2 – half pound boneless skinless chicken breasts.

4 ounces fresh mushrooms sliced.

1/3 cup fat free Italian Salad Dressing.

1/4 cup low sodium chicken broth.

1/4 cup red wine.

1 Tbsp. flour.

1 Tbsp. olive oil.

1 Tbsp. fresh parsley – chopped.

1/2 tsp. Italian Seasoning.

1/4 tsp. garlic powder.

1/4 tsp. salt.

dash of paprika, dried oregano, pepper.

For Spinach Salad –

2 cups fresh baby spinach.

1 apple peeled and cubed.

1/4 cup dried cranberries.

1 tsp. chopped pecans.

1 tsp. Italian Seasoning.

3 Tbsp. soy sauce.

3 Tbsp. fresh lime juice.

6 Tbsp. Red Wine vinegar.

1 Tbsp. sugar free pancake syrup.

1 tsp. mustard powder.

grated Cotija cheese to taste.

Preparation:

Chicken Marsala –

Wrap chicken loosely in plastic wrap and pound it down to about a half-inch thickness. Place chicken, along with Italian Salad dressing, in a plastic bag. Move the chicken around to coat, and place bag in refrigerator for as much time as you have — up to a couple hours.

In a bowl, mix together the flour, Italian Seasoning, garlic, oregano, paprika, salt, and pepper.

Remove chicken from plastic bag, discard marinade, and then coat chicken on both sides with the flour mixture.

Pre-heat oven to 350 degrees.

Heat olive oil in fry pan, add chicken breasts and fry the chicken for two minutes per side to get a nice browning.

Remove chicken from fry pan, add wine, broth, mushrooms, and sauté for a couple minutes.

Spray 13 x 9 inch baking dish with canola oil, add chicken, and then  add the broth mixture. Bake uncovered for about 25 minutes or so to achieve an internal temperature of 165 degrees.

For Spinach Salad –

Rinse and dry the spinach.

To a large bowl plate add the spinach, dried cranberries, apple,  and pecans. Gently mix the ingredients on the plate.

To a jar add all other ingredients except the cheese, cover and shake to mix. Drizzle some of the dressing (maybe two or three tablespoons) and refrigerate left over for next day salads.

At the table garnish the chicken breasts with parsley, and the salad with Cotija cheese.  That’s all there is to making an easy, light, dinner.

Vegas, still cool,

EASY RECIPES

So I’m tired of just posting easy recipes. I have something like 240 easy recipes in the archives that you can search and dine off for the next two years!  I’m thinking … lets have some fun.

AND STUFF

So, do this; think of your wants on a Las Vegas vacation and put yourself in one of three groups: never been to Las Vegas, been there, and bored by Vegas.

I have been going to Vegas for at least 25 years. Back in the day I  stayed at and loved the Sands. The low level rooms surrounded by a grass bordered pool. It was more motel than resort.

She who must be obeyed and I were there when the pirates across the street fired their first cannons and the fountains down the strip danced to a great tune.

So, here’s the deal if you want a Vegas tip. If you have the money you must get a fountain view room at Bellagio! Tune the fountain music onto the TV and enjoy watching the fountains from high above the grounds.

Don’t have enough juice for Bellagio? In descending order take down Venetian, Paris, Mirage, and Monte Carlo.

And if you have been to the Strip a few times consider leaving the strip!

Here’s a secret: there are local casinos and those in the know frequent those casinos.  Consider staying and playing at the Red Rock Casino, or Green Valley Casino. What’s cool off strip? Smiles you get from the team workers, better odds, nice neighborhoods to stroll through, and less of the self-employed – unemployed street workers.

Where would I stay off strip? I not only would but did stay at Red Rock last weekend! It is about 12 miles from the sadness that is the sidewalk along the strip. It has red rock views, a great pool. good restaurants, and people that seem to care about you.

So, if it is your first time hit the strip! But if you are tired of the whole strip thing consider Red Rock or Green Valley.

Easy Beef Short Rib Rigatoni

EASY RECIPE

Boneless beef short ribs are good, bacon is good, rigatoni is good … so combining them should make a great meal. Right?

Ingredients:

3 strips of thick cut bacon.

1 and 1/4 lb. boneless beef short ribs.

1 cup diced onion.

1 cup water.

1/2 cup diced green bell pepper.

1/3 cup BBQ sauce.

1/2 cup red wine.

1 cup water.

1/4 cup minced carrot.

14.5 oz can stewed tomatoes.

2 cloves garlic – minced.

1 tsp dried basil.

salt and pepper.

1/2 tsp olive oil.

Preparation:

In large frypan fry bacon, and then set bacon aside. In bacon grease sauté all vegetables until soft.

To a large pot add can of tomatoes, wine, BBQ sauce, and water; heat on medium, add sautéd vegetables. Reduce heat to simmer.

Prepare short ribs for some surgery.

Slice the short ribs into large bite size pieces and then season with salt and pepper.

In same frypan add olive oil, bring to medium high heat and add short ribs. Fry ribs, turning often, until nicely browned on all sides.

Add ribs to sauce, bring to boil and then reduce to simmer and cover. Simmer for at least 30 minutes so the flavors infuse the ribs.

Prepare rigatoni as directed on packaging.

Grate some cheese, and plate the awesome meal you made by yourself!
