Moroccan Stuffed Bell Pepper and Chopped Kale Salad

She Who Must Be Obeyed and I are trying to eat a little healthier as well as a little less. So, I borrowed a little from the Williams-Sonoma Moroccan meatball recipe, and came up with an easy, great tasting Moroccan Stuffed Bell Pepper for two recipe. I also wanted a lite salad so I created a yogurt based dressing to brighten up kale.

The flavorful meat mixes well with the fresh tasting dressing and kale as it tumbles out of the pepper during the meal.

Ingredients:

salad and dressing:

kale for two.

1/4 cup vanilla nonfat Greek yogurt.

1 Tbsp. extra virgin olive oil.

2 tsp. rice vinegar.

1 tsp. lemon juice.

1/4 tsp. ground cumin.

1/4 tsp. dill powder.

1 clove minced garlic.

1 Tbsp. minced parsley.

stuffed bell pepper:

2 large green or red bell peppers.

.60 pound of 93% lean ground beef.

1 Tbsp. minced parsley.

1 tsp. ground cumin.

1 tsp. cayenne pepper.

1/4 tsp. salt.

1/4 tsp. cinnamon.

1/8 tsp. powdered ginger.

2 green onions – chopped.

1 tsp. extra virgin olive oil.

1 roma tomato – chopped.

8 oz tomato sauce.

white cheese for topping.

Preparation:

Salad:

Chop sufficient amount of kale for two.

To mixing bowl add all other dressing ingredients and stir to mix. Refrigerate dressing and kale.

Moroccan Stuffed Bell Pepper: 

Slice off top 1/4 or so of both bell peppers, and then remove seeds and ribs.

In large pot heat water to low boil and blanch peppers for 4 minutes. Carefully remove peppers and stand them cut side down on paper towels.

Preheat oven to 375 degrees.

In large bowl add ground beef and stuffed pepper meat ingredients except olive oil, tomato, tomato sauce, and cheese. Hand mix to evenly distribute the spices.

To a frypan add the olive, heat to medium high and then add meat mixture. Fry until nicely browned and then add chopped tomato and tomato sauce stir to mix. Lower heat to medium low and cook for 5 minutes.

Place bell peppers cut side up on foil lined baking tray and fill with meat mixture.

 

Sprinkle white cheese on top of meat mixture and place baking tray with bell peppers into the oven for 25 minutes.

Plate the cooked stuffed peppers. Surround each pepper with chopped kale and drizzle with dressing.

That’s all there is to making an easy but great dinner for two!
