Easy Diced Chicken Cabbage Salad or Pita Sandwich

EASY RECIPE

No worries, let your family or guests decide which dish they would like; an easy chicken salad pita sandwich or a cool fresh chicken salad.

Ingredients

1 lb. boneless skinless chicken breast.

2 cups  shredded cabbage.

4 strips bacon.

2 celery ribs – halved down middle and sliced.

2 green onions – chopped.

1 avocado – skin removed, and then cut avocado away from seed in wedges and then slice into small bite size pieces.

1/3 cup dried cranberries.

1/3 cup sundried tomatoes -chopped.

Pita bread.

Lettuce and store bought Basalmic dressing.

For Dressing:

1 cup plain Greek yogurt.

1 Tbsp. fresh lemon juice.

1 Tbsp chopped fresh dill.

1/2 Tbsp lemon zest.

1/4 tsp cumin powder.

1/2 tsp red wine vinegar.

salt and pepper to taste.

Preparation

Fry bacon until cooked and then remove bacon from pan and set aside.

Boil water in large pot and then add chicken. Bring back to full boil and then lower to light boil for 10 to 15 minutes, until chicken juice when cut is clear and chicken is white through center.

Chop, slice, and dice as set forth in ingredients above.

Chop chicken into nice bite size cubes.

Chop bacon.

Shred cabbage.

Wash lettuce (If making lettuce salads).

In sauce bowl mix all dressing ingredients until well blended.

In large bowl add the all ingredients except the home made dressing and lettuce.  Gently mix together.

Next add half the home made dressing and stir.

Add the remaining half of  homemade dressing and stir again.

Slice pita bread in half, load with salad mixture, and plate with lemon slices.

For salad, plate lettuce leaving an open spot in the middle of the plate, drizzle lettuce with store bought Balsamic dressing, and fill the open spot with a serving of the diced chicken cabbage salad.

And there you go, you just made great to order dishes!
