Easy Low Fat Coleslaw

My easy slow cooker pull pork sandwich post included a reference to Sue’s easy low fat coleslaw. Monica requested the recipe.  I should tell you that Sue’s mom found the recipe in the Los Angeles Times, Culinary SOS column years and years ago.  The recipe was requested by a reader and SOS was able to get the Tam O’Shanter recipe.  Although Sue has modified the recipe to reduce salt and fat even further, all accolades go to Tam O’Shanter or SOS.

And, you know what’s really cool about the recipe?  Sue’s mom and dad used to go to the Tam O’Shanter on dates 65 years ago! Well, what’s good stays good!    You are going to love this recipe.   

Recipe serves 6.

INGREDIENTS:    

4 C shredded cabbage (from cabbage head or pre-shredded in bag)

1 C chopped celery

1/2 C green onion diced

1/4 C  low salt roasted peanuts – chopped

1/2 tsp seasoned salt

1/4 tsp seasoned pepper

1/3 C fat free Italian Drssing                             

Preparation

To large bowl add  cabbage, green onion, celery, and peanuts. Add seasonings and lightly toss.  Add fat free Italian dressing and toss again.  Cover with wrap and chill for later serving.


And just like that you made an easy coleslaw that is great and does not have mayo!  Super tasty and low fat!
